eaf-proxy-function instead of eaf-dummy-function by Stefan Monnier

Rename from eaf-dummy-function since it's not dummy any more.

    Reduce the number of parameters needed in eaf-proxy-function and
    eaf-gen-keybinding-map

    Clearer eaf-bind-key documentation
